Foolproof Salmon
People are always asking me “how do I cook fish?”. They simply don’t know. While there is a plethora of tasty ways, I’ve posted some and will surely post more in the future, this is my go to and the one I tell everybody. It’s also my daughters’ favorite thing I make.
These days we are constantly being told to eat more oily fish and for good reason. They are rich in omega-3 an essential fatty acid. It’s high in protein and low in bad saturated fat. It also contains vitamins, minerals and is high in the antioxidant astaxanthin.
You can get both wild caught and farm raised readily these days. I highly recommend wild. First off, the flavor and texture are superior. It’s also sustainably caught and healthier. Farm raised salmon, on the other hand, is usually damaging to the environment. And because they don’t get to swim as much, they also contain more saturated fat and accumulate more toxins. There’s a reason they must dye it orange.
This method is so easy a child can do it. It’s fast too, great for a weeknight meal. Seriously, when you see how easy and fast it is, you’ll have no excuse not to reap its wonderful health benefits.
What you’ll need
Approximately 30 minutes total time.
1 salmon fillet
2 tsp dried tarragon or dill
1-2 T brown sugar
Salt & pepper
Set the oven to 400 degrees.
Lay out your salmon fillet skin down on a baking sheet lined with aluminum foil. I almost always line baking sheets with foil as it makes for super quick and easy clean up. Sprinkle evenly with some salt and pepper and then the tarragon or dill. Next coat with the brown sugar.
Stick it in the oven for 20 minutes, no more, no less.
Bam, you’ve got a delicious piece of fish. My work here is done.
